Potato starch is produced by crushing the root tubers of potatoes. The starch is then washed out and dried to powder. Potato starch lends a tender soft mouth feel to gluten free baked foods and works well especially in recipes with eggs. Potato starch is also fantastic natural thickening agent, and excellent in soups, pies and fillings.
