Gluten free Crunchies
One of the things I have experienced in this journey with my son is that before his intolerance to Gluten, is that being a growing boy he would eat anything and everything and when findng out that he can't eat gluten anymore it has been hard to see his face when we do the weekly shopping and he sees all the things that he used to eat and can't anymore.
I know there are products out there for Celiac disease and gluten and wheat intolerance.
I know that there are companies out there that are making gluten free products and selling them but not everyone can buy them.
So I had to look online for recipes that can help my son, which I found and will share here for you to try. I also took my own recipes that I knew my son enjoyed and tweaked them a bit so that he could enjoy his favourite meals and desserts.
Crunchies
- 250g margarine
- 2 tablespoon syrup
- 1 cup Glutagon All Purpose gluten free flour
- 1 cup coconut
- 2 cups
- a generous pinch of salt
- 1 teaspoon bicarb of soda
- 1 cup sugar
Method:
Melt syrup and margarine together in microwave.
Mix dry ingredients.
Mix together, this will be a crumbly mess, don't worry, press it tightly into a large oven pan.
Bake at 180 degrees celcius for about 20 minutes until golden brown.
Cut while warm and soft and after a few minutes of cooling, remove from pan and place on newspaper and kitchen towel to remove excess oil and harden.
