Hot Cross Buns

Gluten-free hot cross buns are a variation of the traditional hot cross buns that are suitable for people who need to avoid gluten in their diet. Here's a recipe for gluten-free hot cross buns:

Ingredients:
1 tbsp yeast
1 cup sugar
1 ½ cups milk (warm)
4 cups Glutagon all purpose gluten free flour
¼ cup psyllium husk
2 tsp cinnamon powder
2 tsp All Spice or Mixed Spice (Allspice, cloves & nutmeg)
½ tsp salt
1 ½ cups sultanas
1-2 oranges zest only
3 ½ tbsp butter (melted)
3 eggs
1 tsp vinegar or 2 tsp lemon juice
4 tsp baking powder

Crosses: ½ cup flour mixed with 5 tbsp water
Glaze: 1 tbsp apricot jam with 2 tbsp water (heat 30 seconds in microwave)
Note: sultana’s & orange zest can be substituted with a packet of cake mix fruit

Method:
Mix all ingredients together, allow to rise for an hour in a warm place covered with plastic
Use large muffin pan to make individual buns as the dough is to runny to make separate buns in a tray.
You can use a plastic bag with the corner snipped off to make crosses on buns if you don’t have a frosting tube.
Allow to rise for an hour in a warm place, but don’t worry if it doesn’t rise very high, the baking powder will help it rise the rest of the way and give you the perfect texture to the buns.
Bake at 180 degrees Celsius until knife comes out clean
Baste with glaze while still hot.
